Pumpkin Chilli

Ingredients
  • 1 yellow onion 
  • 1 carrot 
  • 1 capsicum
  • 1 teaspoon olive oil
  • 2 - 3 garlic cloves
  • 1 jalapeno
  • 2 teaspoons soy sauce
  • 2 1/2 tablespoons mild chilli powder 
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 can low-salt diced tomatoes
  • 1 1/2 cups pureed pumpkin
  • 2 cups vegetable broth or water
  • 3 cups cook beans
  • 1 tablespoon lime juice

Steps:
  1. Chop up onion, carrot, capsicum into pieces no bigger than a bean
  2. In a big soup pot, heat the oil over medium heat.
  3. Add onion, carrot, capsicum and saute them until they begin to brown about 5 minutes.
  4. Add garlic, jalapeno, soy sauce, and spices and cook together 30 seconds
  5. Add tomatoes, pumpkin, broth, beans and stir that up so everything is mixed.
  6. Turn down the heat, cover and let simmer together for about 15 minutes.
  7. Stir it around every now and then.
  8. When done simmering, turn off the heat and stir in the lime juice.
